We found this recipe a few weeks ago in the latest issue of Family Fun and have already made it a couple of times. I keep forgetting to buy fluff, so I've been melting marshmallow's rice krispy treat style with a little bit of butter. They end up slightly chewy and I think better than the fluff!

Cauliflower Gratin

I saw this recipe on the Food Network and it was super yummy. Even Brian, who doesn't eat brocolli or cauliflower, liked it! It's like a cauliflowerly mac and cheese. I used mozzarella instead of gruyere and would use less red pepper flakes next time. It was quite spicy!

Very impromptu last night before bed, I asked Brian to try and take a picture of Timothy hugging or kissing his baby sister. These pictures were the result :) Not great, but you'll find Timothy doing this about a hundred times a day! I think we'll try again because I know they could be super cute. This will also serve as my "29 week" picture. I commented on some other friends prego pictures and had to admit I didn't have any of myself up anywhere. Some people love to be pregnant and love the way they look. The 2 times I've been pregnant I just feel awkward and though I love the result, I don't feel much need to record the journey. Maybe I'll regret that someday. So here's my attempt for at least this week :)

This year, we decided to cut back on Christmas gifts to one another. We're adding another story onto our house and we get a gift that is very precious to us, we have our ultrasound scheduled for this Thursday. We couldn't ask for a better gift than seeing our little one <3

Timothy, Tyler & Kyanna made Gingerbread houses (or in our case, graham cracker houses), it was lots of fun! Once I said, "it's okay if you eat some of the candy" that's all Timothy would do! Needless to say, his house lacks decoration!

Christmas Activities, part 1

Christmas tree shopping attempt #1. Timothy was so sound asleep that Brian carried around the whole lot like this, and he never woke up! I just couldn't pick out a tree without him....so we came back the next day for attempt #2!

What is Timmy doing, you ask? Fishing. Didn't you know all you need to fish in a Christmas tree patch is a long piece of grass and a little imagination? :)

(So glad you waited until I was awake for this Mom!) LOL

Yea! The tree is up and decorated! For the past 2 years, Timothy has had this fascination with Nutcrackers. He loves them! Ours are all just decorative, if anyone knows where I can find a real one, let me know :)

We got our first real snowfall and of course, had to build a snowman! Timothy has been talking about making one for months. He's learning a few Christmas songs and told me that our song needed a "button nose," like Frosty. We compromised with a carrot ;)

While baking cookies, Timothy decided to entertain himself! Let me tell you, these spice containers proved hours of fun!

Molten Chocolate Cakes

Here it comes! I told some of you that I'd post this recipe. I found it in a Kraft Foods magazine a couple of years ago and it's become one of Brian's favorites! I've been told that you can buy fancy shmancy things to make molten cakes, but these don't require anything special, are so simple, and are very yummy!

4 squares BAKER'S Semi-Sweet Chocolate
1/2 cup (1 stick) butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour

PREHEAT oven to 425°F. Butter four 3/4-cup custard cups or soufflé dishes (I use glass pyrex bowls). Place on baking sheet.
MICROWAVE chocolate and butter in large microwaveable bowl on HIGH 1 min. or until butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in sugar until well blended. Blend in eggs and egg yolks with wire whisk. Stir in flour. Divide batter among prepared custard cups.
BAKE 13 to 14 min. or until sides are firm but centers are soft. Let stand 1 min. Carefully run small knife around cakes to loosen. Invert cakes onto dessert dishes. Serve immediately, topped with whipped topping. Enjoy! :o)

Hi Everyone!

I haven't posted in MONTHS! But that's because every time I try, my computer eventually times out and nothing will go through. We now have roadrunner at the new Nodine's office in town, so I'll use my coffee breaks (the guys take one, don't they?) to update the blog. And this time, I'm not going to add just pics, but other things as well. My favorite whatevers! So to kick off the new & improved blog, I'm going to share one of my favorite new recipes. If you're pregnant and I'm bringing you a meal, this is likely what you'll get!

Chicken Divan (or as the blogger called it on their website "Chicken in a Pan With a Tan")

1/2 cup mayonnaise
1 can cream of mushroom or cream of chicken soup
1/4 to 1/2 cup milk (enough to make it creamy but not soupy)
2 cups cooked, cubed chicken
1-1/2 to 2 cups shredded cheddar cheese
1/4 teaspoon pepper
1 package frozen broccoli (florets or chopped, your choice)
Cooked white or brown rice, 2-3 cups

Preheat oven to 350 degrees. Grease a 9×13-inch pan or similar casserole dish, something a bit smaller than a 9x13 made a creamier casserole. Mix mayonnaise, soup, milk, chicken, cheese, and pepper. Cook broccoli according to package directions. I plop it all in the pan and mix it up right in the baking dish. You can layer it, but that doesn't seem to work very well for me. Bake for about 35 to 40 minutes or until heated through and bubbly on top.

There are lots of options for this which makes it easy and fun! I added mushrooms one day and the next made it really basic (ok, so those are only the 2 times I've had it, but it's so yummy!)

Catching Up, Part 1

One of Timothy's favorite things to do this winter was to go for a "ski-doo" ride! He begged and begged everyday and abosolutely loved it!

He learned to eat a banana like a big boy :o)

And had his first painting lesson...

Which we gave to Joshua for his 1st birthday!

Timothy loved Aunt Kim's ducks! And was very disappointed when we were there a week ago and the ducks weren't there anymore :(!

While Daddy was taking classes in New Hampshire, Mommy & Timmy had fun at Chuck E. Cheese's! He seriously would've stood there all day and watched the mechanical Chuck E. sing. He didn't even care about the rides/games!

We went to the Strong Museum, Timothy, of course, loved the fish tank :o)

We even learned to enjoy sharing a good cup of tea!

Probably one of Timothy's favorite things we did this winter was go to the Tractor show!

And every one loves an evening in once in a while, even Timothy :o)

I realized Timothy had grown when he tried to get into the bathtub, like he always does, before it's time, and suceeded!

Vacations

Okay, so these are really old now, but I'm attempting to catch up! Here are some pictures from our vacation to Lake Chautauqua this summer!

Our biggest reason for going to this Lake was because it's known for Musky fishing. And yes, Brian caught one! More so, we were all on the boat to see it!

We spent lots of time on the boat, relaxing outside and Carly did her fair share of shopping. About halfway through our vacation we learned how to vacation with a Timothy! We also had some visitors, Randy & Stephanie one day and Ben, Jamie and Joshua even came another day!

Our second vacation was to Avalon, NJ. We went in September and it was so much warmer than any of us expected!

"Roo" quickly became a nickname of mine for Timothy. I think it started when I'd carry him around in his sling, he reminded me of a little "Timmy - Roo" My sister in-law found this costume for us and it was too perfect not to wear! We went to a total of 2 houses and had a very memorable first Halloween with cousin Josh!

Joshua was our official "little stinker" of the evening, presenting himself as a skunk for night!

Timothy has taken to standing & climbing on whatever he can wiggle his little feet onto!

I'm sure you're wondering what on earth he's doing here, we did too for awhile! I think it's simpy to make you smile! He does this goofy thing where he scrunches his face and sniffles his nose, then he waits for you to laugh and to do it back to him!

He loves to sit by his books, pull them all onto the floor, then flip through the pages ... he keeps himself occupied forever doing this! Sarah watched him last Friday night and she said, "I know you said he likes books, but that's all he wanted to do!"

He's also learning how to shuffle around with this walker thing!

For our anniversary we took Timothy to the Rosamond Gifford Zoo in Syracuse. I thought it'd be fun, but I never guessed Timothy at 8 months would have so much fun!

He slept like this for awhile and then all of sudden Brian looks over at Timothy in his basket and sees the musky flailing about. Timothy's arm was under the musky and he couldn't get it off of himself. Timothy started crying, he must've been dreaming he was being attacked by the fish! Don't worry - Daddy saved the day and rescued Timmy from the nightmare!

Gracie sleeps in our room and at night we've been hearing creaking and cracking lately. Well, it's Gracie climbing into and getting comfortable in our wicker clothes basket. Gracie's been a great dog to Timmy! I think the picture of the two of them was taken when Timothy was just 4 days old. We were sitting in the yard playing frisbee and Gracie kept returning the frisbee, not to me, but to Timothy. She's very gentle and good with him! She just can't wait until he's old enough to play :o)

Here's a cool story....Timothy was born on a Thursday night. Brian and I go to a group that meets at our church on Thursday nights. So, that night at their meeting they prayed for us. Minutes later (honestly!), after 18 hours of labor, Timothy was born. They prayed somewhere around 7:25/7:30 and Timothy was born at 7:38. What a great answer to prayer! An Afternoon on the Boat...

One of our favorite things to do in the summertime is go out and enjoy the water on the boat. It's great when you can share that with friends!

Camping at Lake Durant

This one is dark, but Ithought the silhouette was kind of cool.

While fishing for Musky's, Brian caught several large mouth bass.

We're out on the boat and Brian says, "Look!" I looked all over the place, trying to figure out what he was talking about, then I saw it....A squirrel swimming! It was so crazy!

In July we went camping at Lake Durant in the Adirondacks. It rained the whole first night and when we woke up a ranger told us that there was a bear siting during the night. We looked around our site and were convinced that this is a bear print! It's hard to see so you probably think I'm just crazy, but it honestly looks like a bear clawed the ground.

We went and saw fireworks at Emerson park to celebrate the 4th.

This 4th of July marks our 3rd Anniversary! My how time flys!

Creation Festival '07

The Creation Festival is a music festival held in Mount Union, PA (or thereabouts). It's held from a Wednesday to Sunday and thousands of people come out and camp on this "farm" each year. During the day there are bands and speakers to hear and each night some of the biggest names in Christian music perform. If you haven't ever been to Creation, I highly recommend going. The speakers are great, the music is great and it's a time to really draw close to God.

Each year at Creation they have a candlelight ceremony.

Everyone gets a candle and the flame is carried across the crowd.

Can you imagine this in a crowd of 80,000 people?

It's an incredible moment and what a vivid example of a city on a hill!

"You are the light of the world. A city on a hill cannot be hidden. Neither do people light a lamp and put it under a bowl. Instead they put it on its stand, and it gives light to everyone in the house. Brian's new boat, affectionately dubbed "The Icebreaker," for it's width and weight! It's a 16 foot fishing boat, he's already used it quite a bit! This picture is from the Island where we ran out of room to dock, so the guys came up with a brillant idea to dock the boat on the floating dock!

We were driving to take pictures of the waterfall where Tim & Megan got engaged and drove past this truck with a "for sale" sign. Carly was driving and much to Brian's dismay, wouldn't stop. In my defense, we needed to take pictures, Tim & Megan's wedding was just a couple of weeks away, and it looked like it may rain. I promised we'd stop on the way home - which we did. The rest is history. We never would have been travelling anywhere near this truck had it not been for Tim & Megan - Thanks guys!
